I fell back in love with kale after having a kale salad at Gjelina the amazing restaurant in Venice. They make their salad with breadcrumbs, shaved fennel, radish, lemon, ricotta salata, and breadcrumbs. I have just improvised on that recipe and prepared it with tuscan kale, lemon, olive oil and sesame seeds. The trick i have discovered is to massage (yes with your bare, clean hands) the kale for as long as you can. That seems to break down the enzymes in the greens and eliminate all the toughness and bitterness. (yes could be sound advice when dealing with mankind). Even my kids love this salad!

2 bunches of Kale
3 lemons
3 tablespoons olive oil
3 tablespoons toasted sesame seeds or pinenuts
2 tablespoons breadcrumbs
ricotta cheese
sea salt to taste

optional – watermelon radish, fennel, breadcrumbs.

Finely chop the kale after washing thoroughly. Start massaging the greens with your fingers for 15 minutes. Add lemon juice and massage that in as well.  add oil and let sit for about 20 minutes. add rest of the ingredients.
