An easy dinner of roasted kabocha squash with almond and fennel seeds, sauteed kale in coconut oil with tamari, and drunken French lentils.



 

Recipe for Drunken French Lentils

1 cup French Lentils (I used Gold Mine the Heirloom quality)
a half cup of shallots
a garlic clove
2 tablespoons Ghee
4 tablespoons high quality oil
a half cup of dry white wine
a half cup chopped Italian parsley
an apple sausage chopped (optional)
Salt and pepper
Boil the lentils in 2 cups of water until water has been absorbed. Then saute the garlic and shallots in the ghee until golden. Add the sausage and lentils and after it has mixed well the wine. Top with the oil, parsley and salt.
So simple and delicious!
