My Fava- orite Fava Toast

Okay this dish must be a hit when my five year old’s friend asks if we are having that “green toast” for dinner again. This recipe comes from my friend Judith Scott. I’ve been making it every week since fava’s have been in season. This week at the market I only saw one stall with them, so we don’t have favas for much longer. 

Ingredients:
Fresh sour bread or baguette
Extra virgin olive oil
2 garlic cloves
salt
1/2 pond of fresh fava beans (shelled)
juice and zest of 1 lemon
handful of fresh mint
salt and pepper
pecorino cheese

Cut the bread and sprinkle with oil, salt and rub with garlic. Toast the bread in the broiler
or griddle pan. 
boil the fava beans for 5 minutes. (to keep the bright green color of the beans here is a trick Michael Reed taught me. After cooking the beans dump them in a bowl of ice and ice water. This will make them a beautiful crisp green) Squeeze favas from their skin. Then puree them with olive oil, lemon, lemon zest, mint, salt and pepper. Spread the crostini with the beans and add pecorino and some more mint. So utterly easy and delicious!!
