Gnocchi Super Food Pesto With Alexa

Easy & Healthy Pesto Recipe with Hemp Seeds

Even though I am pretty much totally gluten~free these days since most wheat items are contaminated with GMOS’s and other invading toxins, I still crave a good ole’ Italian meal with pasta or my favorite Gnocchi. The lovely food fairy Alexa Gray, who taught me how to make the delicious super food packed chocolate-berry pie, introduced me to Cappello’s Gluten Free, Grain Free, Fettuccine, PastaCappello’s make all their pasta, gnocchi and cookie dough products with almond flour in a delicious way, bypassing all the wheat tainted ingredients. Their Primal Palate’s Chocolate Chip Cookie Dough is completely addicting! The gnocchi we prepared is made simply from organic potato, water, almond flour, cage free eggs, tapioca flour and sea salt. Pesto has been a staple of mine since my older daughter Coco was a mere sprite. You can intermix the greens with basil, arugula, kale and add it to quinoa or even salads. For the nut ingredient, you can interchange the traditional pine nuts for walnuts, almonds or brazil nuts. My kids are always skipping with glee when we have pesto on the menu, and it’s an easy way to get in some powerful nutritious elements. Alexa’s amazing version has hemp seeds in the pesto, which is a wonderful way to get omega 3 and omega 6 fatty acids. Hemp seeds are my favorite super food these days. They are anti inflammatory, excellent for glowing skin, full of gamma linolenic acid which improves hormones, and brimming with minerals and vitamins.

Ingredients for the Super Food Pesto. Simply add this to a Cappello Pasta or Gnocchi dish. Directions how to prepare the gnocchi on their products!

(At times I like to substitute the pine nuts for organic walnuts or almonds.)

– 1/2 to 3/4 cup shredded basil
– 1/2 clove garlic
– 1/2 teaspoon salt
– 1/2 to 3/4 cup olive oil
– 1/4 cup pine nuts
– 1/8 cup hemp seeds
– 1/2 lemon
–  Sea Salt (truffle salt can be substituted)
