Festive Pomegranate Pistachio Quinoa Delight

This is an older recipe from a few years back, but since we are approaching the holidays I thought to repost it. It is quite easy to make and perfect to bring if you are going to a pot luck event.
A great side dish for Thanksgiving dinners that is healthy and oh so delicious is a quinoa salad. My quinoa salad with pomegranate, roasted almonds and pistachios, cilantro and green onions is full of festive colors, healthy ingredients and seasonal gems.  It’s also great with feta cheese. The onions and cilantro are fresh from my garden, but feel free to improvise with basil leaves, tarragon and sage. 
There are so many wonderful benefits to eating quinoa such as: it is a seed not a grain and has seed properties and minerals. It is rich in protein, fiber, manganese, magnesium, phosphorus, folate, copper, iron, zinc, and potassium. Pomegranates have more antioxidants and polyphenols than green tea and red wine. This is an anti cancer serum and a symbol of fertility and abundance in Hindu and Persian cultures.
 
To dress the table I love to add a bowl of persimmons that are also in season, and baby roses in little mason jars. The colors are so vibrant and rich. Some watermelon radish with salt from the farmer’s market add to the colorful palette and are yummy to snack on.

Quinoa Holiday Recipe
1 cup red, white or a mix of both quinoa (I like to soak the quinoa for better digestion)
2 and half cups water
1 Pomegranate (seeded)
1/2 cup feta cheese
1/2 cup chopped cilantro
1 green onion chopped
1/2 cup almonds
1/2 cup pistachios
5 tablespoons Olive Oil or to taste
1 lemon
sea salt
Olive Oil (the better the brand the better the taste)
Drain the soaked quinoa and boil it with two cups water. When all the water has boiled away, let it cool. Chop cilantro and mix with pomegranate, green onion. Saute almonds and pistachios in olive oil on the stove top. Mix all the ingredients and add lemon, olive oil, salt and pepper. So easy and delicious.
